Product detail
Le 5 Stagioni Lemady is a professional-grade dried wheat sourdough mixture engineered to elevate your baking. Made in Italy, this premium dough enhancer helps bakers and pizzaiolos achieve a highly honeycombed, open cell structure (alveolation) and a spectacular oven spring.
This 1kg powerhouse optimizes dough elasticity and structural stability. It is especially beneficial for managing high-hydration, wholemeal, or long-fermentation doughs. By integrating Lemady, you get the rich, complex flavour and aroma profiles of traditional artisanal sourdough without the logistical hassle of maintaining a live, wet starter culture.
Please note that Lemady is a structural and flavour supplement, not a leavening agent. It does not replace your yeast. It must be mixed directly into your dry flour at the beginning of the kneading process alongside your standard amount of dry or fresh brewer's yeast. Once opened, keep tightly sealed in the refrigerator and use within 15 days.
Applications
Used by premium pizzerias to achieve the perfect airy, puffed cornicione on high-hydration Neapolitan and Roman-style pizza crusts. Incorporated into artisanal bakery production lines to enhance dough tolerance, elasticity, and crumb structure during long room-temperature or cold maturations.Utilised by pastry chefs and bakers to infuse a rich, complex sourdough aroma and deep flavour profile into breads, focaccia, and specialty baked goods without maintaining a live starter.
